Chocolate Mousse Brownie Dessert

Look at this beauty! Can you believe that this layered dessert is healthy, sugar free, vegan, raw and paleo?
I was inspired to make this dessert by a post I saw on Pinterest. I love it how we can all inspire each other to try out new things, visit new countries and eat more healthy!
I saw this dessert at Unconventional Baker and she saw it in the book Sweetly Raw Desserts from Heather Pace.

This dessert consists of three layers; a banana layer, a brownie layer and a chocolate mousse layer. I started with making the pudding so you can cool it in the fridge for a couple of hours before serving. After that I made the brownies and right before serving I created the layers in a jar (you can also use a glass).

Below are the ingredients for 2 people.
For the pudding:
2 Bananas, Mashed
50 grams (1/3) cup cashews, soaked in water for 30 minutes
1 tbsp maple syrup
1 tbsp cacao powder
1/2 tsp vanilla essence
1 tbsp melted coconut butter

For the brownie:
60 grams (1/2 cup) walnuts
3 dates, chopped
1 tbsp cacao powder
a few drops vanilla essence
a few drops of water

1 or 2 bananas

Blend all the ingredients for the pudding in a food processor. Put the pudding in a bowl and place it in the fridge for a couple of hours. You can already make the pudding a day in advance.
Clean your food processor and mix all the ingredients for the brownie. I took the mixture out and created squares with my hands, but you can also just leave it as crumbs. You can also make the brownie in advance and save it in a closed container until serving.

To serve; cut the banana(s) in slices and divide half of the slices over 2 jars. Top it with half of the pudding and half of the brownies. Add the last banana slices, the brownies and end with a layer of the pudding. Enjoy!
