These courgette pizzas are a great healthy snack for your (dinner) party! They’re gluten free and low-carb.

1 courgette (zucchini)
1 tbs red pesto
2 grilled (yellow) peppers
1/2 mozzarella package
1 tbs oregano
Preheat the oven to 180C/350F. Cut the courgette in 10 slices. Divide the red pesto over the slices. Cut the grilled pepper and the mozzarella in small pieces and divide over the courgette slices. Top with the oregano.
Bake the courgette pizzas for 10 minutes in the oven.
