Couscous with vegetables and yogurt sauce

Eating vegetarian difficult? Not if you ask me! I think it’s super easy to eat vegetarian and I have no problem in creating an easy vegetarian dinner every weekday. As I know that many people struggle with this, I’m sharing the recipe of my Couscous with vegetables and yogurt sauce. It’s one of those dishes that proves that eating vegetarian and healthy can be super easy.

You only need 5 ingredients and 10 minutes max to create this dinner dish. Three of the ingredients I already have at home most of the time, so when I’m making it myself I only need to buy a bag of pre-cut vegetables and the meat replacement. I went for Chinese style pre-cut vegetables and the Oriënt patty from the Lidl. The latter is like a spicy schnitzel, but then vegetarian.
For the yogurt sauce I used unsweetened soy yogurt that I also always use for my granola in the mornings. You can use any kind of fresh or dried herbs for the yogurt sauce. I used a mix of garlic powder and oregano.

Recipe Couscous with vegetables and yogurt sauce

Ingredients (for 2 people):
120 grams couscous
400 grams pre-cut veggies Chinese Style
2 Orient patties (or another meat replacement)
4 tablespoons (soy) yogurt
1 teaspoon dried herbs

Prepare the couscous as stated on the package. Warm 2 skillets, add olive oil to both. Add the pre-cut veggies to one of the skillets and fry for about 6 minutes. Add the orient patties to the other skillet and fry for 2-3 minutes on each side on low to medium fire. Mix the couscous with the vegetables.
Mix the herbs with the yogurt. Serve the couscous with the orient patties and the yogurt sauce.
