Do you already know Ekomenu? Ekomenu is an organic meal box in the Netherlands. I love them because they’ve got many vegetarian and vegan options. On this page I’m telling you all about this sustainable meal box. Ekomenu Meal Box

Just like other meal box services, Ekomenu delivers the right amount of ingredients for the amount of meals of your choice. What’s unique about Ekomenu is that everything is organic and that they pack their meal boxes as sustainable as possible. The ingredients for the meals are delivered in recycable paper bags and they work with plastic-free and compostable packaging.
You can choose if you want your meal box for 1, 2, 3 or 4 people and if you want 3, 4 or more meals a week.

What I love about Ekomenu is that they’ve always got enough vegetables in their meals. A meal box is a great solution if you’re short on time or lack inspiration, but I find it important to still eat healthy.

One of the recipes from Ekomenu that I had this month is mashed sweet potatoes with paneer. On this page I’m sharing that recipe with you, so that you get an idea of the kind of meals that they offer.

Recipe Mashed Sweet potatoes with Paneer

Ingredients (serves 2):
250 grams cherry tomatoes
300 grams potatoes
300 grams sweet potatoes
200 grams paneer, cubed
50 grams Mizuna (or rocket)
2 tablespoons oil
2 teaspoons paprika powder

Preheat the oven to 160°C. Wash the cherry tomatoes, put them in an oven proof tray and sprinkle with oil. Warm them in the oven until they’re wrinkly.
Bring water to a boil. Wash or peel the (sweet) potatoes and cut them in equal pieces. Boil them 15-20 minutes. Drain the water and let them steam dry. Save the water for later.
Heat some oil in a frying pan and fry the paneer while stirring until crunchy and brown. Add the paprika powder for taste.
Wash the mizuna, drain well and optionally cut the leaves a bit smaller.
Pour 100 ml water from the potatoes back in the pan with the potatoes. Mash them well. Stir in the mizuna.
Serve the mashed sweet potatoes with the cherry tomatoes and the paneer.
