Italian Chickpea Flour Bread

Got some chickpea flour and are you looking for a nice recipe where you can use it for? I’ve got you covered. You can make this Italian bread with chickpea flour. This simple Italian pancake bread is called Farinata and it’s similar to the French Socca. The Italian bread only needs three ingredients: chickpea flour, water and oil. A Farinata is often called a pancake, but I think it tastes more like a bread. On this page you’ll find the recipe of Farinata: Italian chickpea flour bread.

Chickpea flour is gluten free and more healthy than white flour as it contains less calories and more fiber and protein. This recipe is gluten-free. The Farinata itself is vegan. I topped it with ricotta, but you can top it with a vegan soft cheese or anything else that you like, to keep it vegan.
The recipe is for 1 Italian pancake bread, it can be a starter for 4 people or a snack for at a party.

Recipe Farinata.
Italian Chickpea Flour Bread.

Ingredients:
150 grams chickpea flour
4 tablespoons olive oil
1 tabelspoon rosemary (dried or fresh)
1 teaspoon seasalt flakes

250 grams seedless red grapes
250 grams ricotta

Put the chickpea flour, 250 ml of lukewarm water, the rosemary needles and 2 tablespoons of the olive oil in a bowl. Add pepper to taste. Mix well. Set aside for at least 20 minutes so the batter can thicken.
Cover a baking tray with parchment paper. Leave half of the grapes on the vine and take off the other half. Lay all the grapes on the baking tray, warm the oven to 275C and leave them in the oven for 20 minutes.

Put a medium sized skillet in the oven for a few minutes to warm up. Put the remaining two tablespoons of olive oil in and swirl around so that the bottom and sides are covered with oil. Briefly mix the batter again and pour it in the skillet. Put the skillet under the grill for 15 minutes, until the Farinata is golden colored.
Cut the Italian chickpea flour bread in pieces and serve with a scoop of ricotta and the baked grapes.
Optionally you can also sprinkle some salt, peper, oil and basamic vinegar on it.
