Did you already try HelloFresh? HelloFresh is the most famous meal box in the Netherlands. A meal box is a box that you can get delivered every week. In this box you will find all the necessary ingredients for a number of meals (1 till 5 meals a week). You choose the number of meals and the number of people (1 to 6 persons). A HelloFresh meal box is perfect for when you find it difficult to to find inspiration for new dishes to cook. It also makes sure you eat enough vegetables and you’ll never have to throw away anything as you get exactly the right portions. I’ve made some delicious vegetarian meals with HelloFresh in the past. For example this quinoa dish with roasted yellow beets, goat cheese, avocado and walnuts.
Below you’ll find the recipe of another vegetarian dish I made with the HelloFresh meal box.
This summer version of the classical Dutch dish ‘stamppot’ (mashed potatoes with vegetables) is one of the dishes that I made with my own HelloFresh subscription. It’s a rocket stamppot with courgette, tomato and crème fraîche. I got the ingredients for 2 people, so the recipe is also for two.
600 grams potatoes
1 courgette (zuchini), cubed
125 grams cherry tomatoes, cut in half
60 grams rocket
20 grams sunflower seeds
2 tablespoons crème fraîche
75 grams of herbed cheese, cubed (for example cumin cheese)
Olive oil, butter, mutserd
Optionally: 6 fresh basil leaves
Cut the potatoes in pieces, no need to peel them if you wash them well. Boil them in water for 12-15 minutes. Roast the sunflower seeds in a skillet without oil for a few minutes, set aside. Heat some olive oil in the skillet, fry the courgette for 3 minutes, add the tomato halves and fry for another 3 minutes. In the meantime mash the potatoes, add the crème fraîche, 2 tablespoons of butter and 1 tablespoon of mutserd. Add the cherry tomatoes, courgette and half of the rocket to the mashed potatoes. Divide the remaining rocket over 2 plates and put the mashed potatoes on top. Sprinkle with the cheese cubes and the sunflower seeds.
Optionally you can finely cut the basil and top the summer ‘stamppot’ with it.
