Vegan leek walnut spread

A while back I was in Antwerp in Belgium and I had a gluten free wrap with vegan leek walnut pesto at ‘Eten vol Leven‘. It tasted really good and since it’s so difficult to find a healthy spread in the supermarket I decided to try to make it myself. As always, I want my recipes to be easy to make. With only a handful of ingredients this one definitely fits that category. Within a couple of minutes this healthy spread is ready to use.
This leek walnut pesto isn’t only healthy, it’s also vegan, raw and gluten free.

Ingredients:
1 leek
1 onion, chopped
a big hand of walnuts
3 tbs olive oil

Cut the leek in rings and put them together with the onion, walnuts and olive oil in a food processor. Optionally you can add a teaspoon of lemon juice or a clove of garlic. I also added a pit of pepper. Then blend it all until smooth.
You can serve it with crackers as healthy party food, but it’s also great on a sandwich or wrap.
