Low-Carb Egg Clouds

Have you already seen these Egg Clouds somewhere? They’re very popular online. I can understand why, they look good, are high in protein and low in carbs. As a matter of fact, they’re practically carb-free. Making it a great dish for after your work-out, a perfect gluten free breakfast or a healthy choice at your Easter brunch table. On this page I’m sharing the recipe of these Low-Carb Egg Clouds.

I’ve seen these Egg Clouds for the first time on Instagram. There are many fit boys and girls active on Instagram who share their high-protein recipes. As these egg clouds consist of hardly anything else than eggs, they’re high in protein and very low in carbs. Only the spring onions add a bit of carbs.
This dish is only 100 calories per person. Or 200 calories, if you’re like me and you eat two egg clouds at once.

Recipe Low-Carb Egg Clouds

For two people (or one hungry person):
2 eggs
25 grams grated 30+ cheese
1 spring onion, cut in rings

Pre-heat the oven to 220 degrees Celsius. Split the eggs. Beat the egg whites stiff with a bit of salt. Add the cheese and spring onion and carefully mix it with a spoon. Spoon 2 mounds of egg whites on the baking sheet and create wells in the middle with the back of the spoon. You’ll be putting the egg yolks there later. Bake the egg whites for 6-8 minutes. Carefully place the egg yolks into the centers and bake for another 2-4 minutes.
You can sprinkle some more spring onion rings, or some frehs parsley on top.
