Protein Chai Pancakes

I love making pancakes on Sunday morning. And as my boyfriend often goes to the gym on Sunday, I decided to make protein pancakes. I used a Chai protein powder (from Live Puri), but you can also use a vanilla protein powder if you don’t have the chai version. As always with my recipes these pancakes don’t contain any added sugars. So they are a healthy pre-workout breakfast dish.

Chai Protein Pancakes
Ingredients (for 6 pancakes/2 people):

1 small bag unsweetened chai protein powder (25 grams)
1 large ripe banana
2 eggs
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
Mix all the ingredients in a blender or food processor. Warm a bit of coconut oil in a skillet and scoop 1/6th of the batter in the skillet. Flip after 2-3 minutes and fry for2 more minutes. Repeat until you’ve finished the batter.
Serve the pancakes with banana slices and chopped almonds.
