Recipe Donut Cereal

It was a big trend last year: Pancake Cereal. It was one of the food trends of 2020, where you’d eat mini pancakes with milk or yoghurt in a bowl. Like cereal, but then with pancakes. It was around that time when I saw someone that made mini donuts and ate them the same way: Donut Cereal. Ever since then I wanted to make Donut Cereal myself as well. But as the recipes on my blog are sugar-free, I wanted to create a healthy Donut Cereal recipe. So I started experimenting and came to the Donut Cereal recipe on this page.

Most donut recipes involve sugar. If the don’t contain refined sugar, then they’re sweetened with honey or agave syrup. The sugar-free donut recipes that I found online are still sweetened with sweeteners. They simply replace the sugar by sweeteners. I wanted to create a donut cereal recipe that’s actually a nutricous breakfast. So I used oats, wholewheat flour and no sugar or sweeteners. This donut cereal recipe is also lactose free.
That being said, I did like to decorate the donuts with ruby and dark chocolate and sprinkles. So, of course, the toppings aren’t sugar free.

Recipe Donut Cereal

Ingredients (serves 4):
100 grams oats
100 grams whole wheat flour
75 grams shredded coconut
2 teaspoons baking powder
125 ml almond milk
2 eggs
1 teaspoon vanilla essence
1 tablespoon avocado oil (or other plant-based oil)

Toppings:
Dark chocolate
Ruby chocolate
Sprinkles

Also needed:
mini donut mould
Soy yogurt or almond milk to eat the donut cereal with

Instructions:
Preheat the oven to 190C.
Combine the oats, flour, coconut and baking powder in a big bowl. In another bowl, whisk the almond milk, eggs, vanilla essence and avocado oil. Add the wet ingredients to the dry ingredients and mix until you’ve got a smooth dough.
Put 1 or 2 teaspoons of dough in each mini donut mould (depending on the size of your mould). If you’re using a silicone mould you don’t need to grease it, if you’re using a tin you should grease it first.
Bake the mini donuts in the oven for 10 minutes.
You can make about 36 mini donuts with this recipe. Most mini donut moulds can make 18, so you can repeat the last step for the other 18 mini donuts.
Melt the ruby chocolate au-bain-marie or with 30 second intervals in the microwave. Decorate half of the mini donuts with the pink chocolate and top with the sprinkles.
Do the same with the dark chocolate.

Eat the donut cereal with yogurt or milk in a bowl.
You can save the remaining mini donuts in an airtight container so that you can have them for breakfast the next day!
