On this page I’m sharing the recipe for vegan Strawberry Flapjacks. In America Flapjacks are a kind of pancakes, but this recipe is similar to the Australian Flapjacks. Recipe vegan strawberry Flapjacks
350 grams strawberries
1 tablespoon lemon juice
2 tablespoons sugar
1 tablespoon cornstarch
75 grams margarine
4 tablespoons maple syrup
100 grams peanut butter
200 grams oatmeal
First you make the strawberry puree by putting 250 grams of the strawberries, the lemon juice, sugar and cornstarch in a saucepan. Bring it to a boil and let it boil on low fire until a thicker puree has formed. Let it cool until use.
Preheat the oven to 180C. Melt the margarine. Put the oatmeal in a bowl and add the melted margarine, the peanut butter and maple syrup. Stir well. Stir in the remaining strawberries.
Pour in half of the strawberry puree.
Line a rectangular baking tray with parchment paper. Add the oatmeal mixture. Press firmly down with the back of a spoon. Pour over the remaining strawberry puree.
Bake until golden brown in about 20 minutes.
Cut in squares.
