Roasted Chickpeas

I always have a can of chickpeas in my kitchen cabinet. I mostly use them to make hummus, but this time I wanted to try something different. I decided to roast them.
Roasted chickpeas make a great snack. So next time you’ve got a movie night planned, why not put some chickpeas in the oven?
This vegan, gluten free, sugar free snack is super easy to make!
You just need 1 can of chickpeas, some olive oil and herbs. On this page I’m sharing the recipe for roasted chickpeas.

Preheat the oven to 180C/350F. Drain and rinse 1 can of chickpeas. After that you want to make the chickpeas as dry as possible. I used a clean kitchen towel and gently rubbed the chickpeas dry.

Put the chickpeas in a baking tray and sprinkle them with salt and olive oil. Don’t overdo it with the oil, but don’t be too frugal either. Roast the chickpeas in the oven for 30 minutes and toss the tray a couple of times in between.
After you take them out of the oven you can sprinkle them with spices of your choice. I prefer pepper and curry powder.

The roasted chickpeas are nice and crispy when they’re still warm. But you can also use them the next day in a salad, instead of croutons!

I used them in this salad bowl together with some tomatoes and my homemade sweet potato falafel balls.
