Sushi Pie

Isn’t this sushi pie a festive meal? This pleases every sushi lover! And not just sushi lovers I think, because it’s one of the most popular recipes on my blog. The video (below) has been watched almost 3000 times!
It’s healthy, gluten free, meat free and raw. I’ve chosen for layers of avocado and salmon, but of course you can pick whichever toppings you like. Maybe a variety with  mango or crabsticks!

I’ve made a pie in a small pie plate, which serves 4 people for lunch or 2 for dinner.

Ingredients:
1/2 a pack of sushi rice (250 grams, 1 cup)
2 sushi nori sheets
1/2 a cucumber, sliced
1 salmon filet (around 300 grams/10 ounce), chopped
2 avocados, sliced
3 tbs mayonnaise mixed with 1 ts wasabi paste

Recipe:
Prepare the sushi rice as stated on the package, let cool completely.
Cut 2 circles the size of the pie plate out of the nori sheets and place 1 at the bottom of the pie plate. Cover with a layer of sushi rice, spread half of the mayonnaise mixture over the rice. Add a layer of cucumber and a layer of avocado.
Top with the second nori sheet and the remaining of the sushi rice. Spread the rest of the mayonnaise mixture over the rice and add another layer of cucumber and avocado.
Finish of with the salmon and your sushi pie is all done! You can cut it in 4 slices before serving.
