Sweet potato stew with peanut butter

I created this recipe for vegetarian sweet potato stew with peanut butter when there was a sustainability awareness campaign in the Netherlands. I wanted to show that it isn’t difficult or expensive to create a sustainable dinner. With this sweet potato stew you’ll have enough for 4 people and it won’t cost you over 12 euros to make it. Vegetarian sweet potato peanut butter stew

Ingredients (for 4 people):

3 medium sweet potatoes
1 can tomato cubes
125 grams 100% peanut butter
100 grams kale
1 teaspoon paprika
1 teaspoon garlic powder (or 1 clove garlic)
4 twigs of fresh coriander (cilantro)

Preparation:
Peel and cube the sweet potato. Put the tomato cubes, peanut putter, paprika, garlic powder and the leaves of 2 twigs of the fresh coriander in a foodprocessor and blend until smooth. Poor the mixture in a pan and bring to a boil. Add the kale and sweet potato cubes en mix well. Turn the fire to a low and let the sweet potato stew warm for 10-15 minutes with the lid on. Stir occasionally. Sprinkle with the remaining fresh coriander before serving.
