Vegan Portobello Asparagus Burger

If you visit my site regularly you probably know that I love vegetarian and vegan burgers. I often share pictures of veggie burgers on my Instagram account and I’ve shared recipes for vegan falafel burgers and red beet burgers. I even went on a quest to find the best veggie burger of Amsterdam!
Now it can take quite a lot of time to make the veggie burger patty yourself, so I’m very happy that the supermarkets sell vegetarian and vegan burgers. One of my favorites is the Asparagus Burger from SoFine. They’re not only vegetarian, but vegan too. They only take a few minutes to fry and are very tasty.
I created a recipe for a portobello burger with the asparagus burger patties. The burger patties also contain courgette and taste great in combination with fresh spinach. You can find the recipe and a discount code for the burgers below.

Ingredients (for 2 people):
2 SoFine asparagus burgers
4 portobellos
2 tbs sundried tomato hummus
200 grams fresh leaf spinach
4 tbs grated carrot
sprouts
Olive oil

Preheat the oven to 180C/350F. Remove the stems of the portobellos, spray them with olive oil, put them on a baking sheet and bake them for 15 minutes in the oven.
In the meantime warm some olive oil and shortly fry the fresh spinach in a skillet. In another skillet, warm some olive oil and fry the asparagus burgers for 3 minutes on each side.
Cover two portobellos with the sundried tomato hummus. Put the spinach, asparagus burgers, grated carrot and sprouts on top. Cover with the remaining portobellos and your vegan burger is all done.
