Sushi Donuts

Sushi Donuts are my latest addiction. I’ve made sushi cake and sushi burgers before, but these days I’m a big fan of sushi donuts! I’ve made a vegan version for me and one with salmon for my boyfriend. They’re much easier to make than you might think, and they’re a lot of fun to decorate with toppings of your choice.
I made a video showing you how easy it is to make these healthy donuts that you can have for dinner. Below you’ll find the recipe of my vegetarian sushi donuts with a surprise! (Spoiler alert: it’s hidden soybeans!)

Ingredients for 6 donuts (enough for 2 people)
Half a package of sushi rice (250 grams)
2 tbs soy beans
Toppings of your choice, I’ve used:
avocado, cucumber, radishes, black and white sesame seeds and salmon.

Prepare the sushi rice as stated on the package and let it cool.
Slice the radishes and cucumber. I used a mandoline to get thin slices. I’ve sliced half of the cucumber lengthwise and the other half in slices.
Scoop two tablespoons of sushi rice for each hole in a 6 cavity donut pan. Use a teaspoon to press the sushi rice together. Put about 6 soybeans in each donut and cover with the remaining rice.
Use a cutting board to turn the donuts around. Decorate the donuts as you want. I’ve also cut an avocado in slices and pressed some sesame seeds on the sushi donuts. And for my boyfriend I’ve strapped some smoked salmon around the donuts.
