Vegan Sweet Potato Nachos

I combined my favorite ingredient (sweet potatoes) with my favorite snack (nacho’s) to make, you’ve guessed it, vegan sweet potato nachos! I think nachos are such a great snack. It’s great as an afternoon snack, but also great pub food. After our trip to Mexico, I like them even more. After making my vegetarian Nacho con Todos recipe, I decided I wanted to create a vegan version too. I didn’t simply want to skip the cheese, but I really wanted to add a tasty twist.  As sweet potatoes are one of my favorite ingredients, it didn’t take long for me to come up with the idea to make sweet potato nachos.

Recipe Vegan Sweet Potato Nachos
Starter for 4 or main dish for 2.

Ingredients:
2 sweet potatoes
1 tbs olive oil
1 teaspoon paprika powder
1 small can of black peans
1 red bell pepper
1/2 avocado
Preheat the oven to 220C. Very thinly slice the sweet potatoes, I used a mandolin. Put them in a bowl and toss them with the olive oil and paprika. Line an oven tray with parchment paper and divide the sweet potato slices evenly. Bake for 10 minutes, turn the slices around and bake for another 5 minutes.

Arrange the sweet potato slices in an oven proof dish and top with the black beans. Cut the bell pepper into cubes and sprinkle on top. Place it back in the oven for another 5 minutes. Top with with cubed avocado.
