It’s December and that means it’s almost Christmas, probably my favorite time of the year. Spending time with my loved ones, winter walks in the cold, long evenings by the fireplace and of course: delicious food!
I love stepping away from traditional food and taking a new, more healthy, road. That’s why I created this vegetarian Christmas burger. I kept the Christmas colors (red and green) in mind, but other than that it has nothing to do with your traditional Christmas meal. A burger for Christmas? O yeah! This red beet burger shows that you don’t need meat or eleven pieces of cutlery to enjoy a good Christmas dinner. Below is the recipe for 4 red beet burgers. The burger patties are vegetarian, vegan and gluten free.

Recipe veggie Christmas Burger
Ingredients:
2 red beets (peeled and cooked)
30 grams oatmeal (1/3 cup)
1 red onion, chopped
1 scallion, chopped
1 clove garlic, chopped
200 gr green/brown lentils (cooked, drained and cooled)
1 tablespoon dried thyme
1 teaspoon paprika

Preheat the oven to 180C/350F. Put half of the oatmeal in a small bowl and add 80ml (1/3 cup) of boiling water.
Heat some olive oil in a small skillet. Add the onion, scallion and garlic and sauté over medium heat until are soft and beginning to turn golden.

In a food processor mix the beets, lentils, onion mixture, thyme, paprika and both the wet as the dry oatmeal. If desired you can add some salt and pepper.
Using a cup or a cooking ring you can now form burger patties of the mixture.
You can fry the burgers in a skillet, but I used my oven for them. Put the patties on a baking sheet and put them in the oven for 20 minutes. Use a spatula to flip them and bake them for 15 more minutes.

I put my beet burgers on a brown bun with hummus, lettuce, tomato and avocado.This burger tastes great with sweet potato fries.
