Healthy new year with meal box

More and more people are discovering the meal box. A meal box is a food box that’ll be delivered to your door with all the ingredients to prepare one or more dishes. I’ve tried out Marley Spoon to see if it’s also possible to stick to a new years resolution of eating more healthy foods and less meat with a meal box. And I discovered that it’s really helpful!

You can order a box for 2 people or for 3-4 people. You can also choose for how many days a week you want the food box; 2,3 or 4 days. On the website you can choose which meals you want, and they had several vegetarian options. As you get all ingredients measured for your meal, you don’t have any leftovers (hurray sustainability!). Marley Spoon works with small and local producers and products and they work with seasonal fruits and vegetables.
Most of the dishes that you could choose were quite healthy.
I went for two vegetarian meals: a flammkuchen with sauerkraut and a Eastern cauliflower tajine.

For this flammkuchen I rolled out the flammkuchen dough, mixed the creme fraiche with garlic and topped the flammkuchen with the mixture. I topped it with sauerkraut and coarsely chopped spinach. I sprinkled it with grated cheese and baked it in the oven for 15-20 minutes. I served it with a side dish that was also included in the package: grated beet, carrot and fresh dill.

If eating more vegetables was your New Year’s resolution, then you’re on the right track with this recipe: sauerkraut, spinach, carrot and beets are all in it and you don’t even feel like you’re eating a healthy meal!

Cauliflower Tajine

For the this tajine I chopped the sweet potato, apricots, red bell pepper, parsley and shallot. I put the cauliflower roses on a baking tray and mixed them with the spice mix and some olive oil (big plus: the cauliflower was already cut in small roses!). I baked the cauliflower in the oven with the grill for 6 minutes and in the meantime I boiled the sweet potato cubes for 5 minutes.
I heated some olive oil in a skillet and fried the pepper and shallot for 3 minutes, then I added the sweet potato and apricot. In a big bowl I added boiled water to the couscous and let it stand for 8-10 minutes. The I added the chickpeas, 3/4 of the parsley and half of the grated almonds. I served the couscous with all the vegetables and garnished it with a bit of soy yogurt, lime and the remaining parsley and grated almonds.

This dish was healthy and vegan! Again this dish had many different kinds of vegetables like sweet potato, bell pepper and cauliflower.

Conclusion: I’m convinced! A meal box is a perfect way to eat healthy in 2018, especially when you don’t have time to do groceries. You’ll get your daily veggie amount and there are very good options for vegetarians.
