Healthy Vegan Vanilla Protein Waffles

I made healthy vegan vanilla protein waffles. These protein waffles are a great breakfast dish or snack for a heathy start of your day or if you want to eat vegan more often. Vanilla Protein

I’m a big fan of vegan protein powders, because they’re the proof that you don’t need animal based products to get enough protein. I always try to go for a sugar-free protein powder, so I don’t get too much sugar in during the day. That’s why I love the vegan protein powders from Garden of Life, they’re vegan and sugar free. Recipe healthy vegan vanilla protein waffles

Ingredients (serves 2):
350 ml unsweetened almond milk (or another plant-based milk)
200 grams flour
1 scoop (30 grams) vegan vanilla protein powder
2 teaspoons apple-cider vinegar
1 tablespoon baking powder
4 tablespoons margarine (or another plant-based butter), melted
1/2 teaspoon vanilla extract
Fruit and/or soy yogurt for toppings 

Mix the almond milk, vanilla extract and apple cider vinegar. Set aside for 5 minutes. 
Add the flour, protein powder and baking powder in a bowl. Add the sugar, melted margarine and the milk-mixture. Use a spoon or spatula to gently combine the ingredients. Don’t use a mixer. It’s okay if the batter has some lumps as long as it’s thick enough.
Scoop a big serving spoon of batter onto your preheated waffle iron and bake until golden brown.
Top with fruit of your choice. Also nice with vegan ice cream or soy yogurt.
