Healthy Vegan Vanilla Protein Waffles

I made healthy vegan vanilla protein waffles. These protein waffles are a great breakfast dish or snack for a heathy start of your day or if you want to eat vegan more often. The waffles are vegan and sugar free. On this page I’m sharing the recipe for these healthy vegan vanilla protein waffles and I’m giving you a big discount on vegan protein powders!

Vanilla Protein

I’m a big fan of vegan protein powders, because they’re the proof that you don’t need animal based products to get enough protein. I always try to go for a sugar-free protein powder, so I don’t get too much sugar in during the day. That’s why I love the vegan protein powders from Garden of Life, they’re vegan and sugar free. They’re also gluten free and organic by the way! I used their vegan chocolate protein powder to make these Chocolate Pancake Tacos. And after that I tried out their vegan vanilla protein powder. This protein powder is great for a more neutral taste, with a nice hint of vanilla. I used the vanilla protein powders before to make vegan peanut butter protein bars.
Because I’m such a big fan of the Garden of Life products, I’m giving you a 30% discount on all items in their web shop. Just use code ANNE and click here to go to the web shop.

Recipe healthy vegan vanilla protein waffles

Ingredients (serves 2):
350 ml unsweetened almond milk (or another plant-based milk)
200 grams flour
1 scoop (30 grams) vegan vanilla protein powder
2 teaspoons apple-cider vinegar
1 tablespoon baking powder
4 tablespoons margarine (or another plant-based butter), melted
1/2 teaspoon vanilla extract
Fruit and/or soy yogurt for toppings

Mix the almond milk, vanilla extract and apple cider vinegar. Set aside for 5 minutes.
Add the flour, protein powder and baking powder in a bowl. Add the sugar, melted margarine and the milk-mixture. Use a spoon or spatula to gently combine the ingredients. Don’t use a mixer. It’s okay if the batter has some lumps as long as it’s thick enough.
Scoop a big serving spoon of batter onto your preheated waffle iron and bake until golden brown.
Top with fruit of your choice. Also nice with vegan ice cream or soy yogurt.
