Recipe stuffed ball zucchini

I saw these ball zucchinis at my online supermarket and I thought they were so nice. It’s a great variety of regular zucchini, so it’s nice for a change. I made stuffed ball zucchinis with zucchini (courgette) and sweet potato. On this page I’m sharing the recipe for stuffed ball zucchini.

You can stuff your ball zucchini with whatever you want of course. I made a vegetarian version, but you could also stuff it with minced meat for example. And you can also choose your carbs. I went for whole wheat couscous but you can also use rice or orzo. Furthermore I used sweet potato and spinach, two of my favorite vegetables.
So you’ll only need 4 ingredients to make this stuffed ball zucchini recipe.

Recipe stuffed ball zucchini

Ingredients (serves 2):
2 ball zucchinis
1 big or 2 small sweet potatoes
150 grams wholewheat couscous 
100 gram spinach

Preheat the oven to 180°C. Cut the sweet potato in cubes. If you wash them, you don’t need to peel them. Put the sweet potato cubes on a parchment lined oven tray and bake for 30 minutes.
Cut off the tops of the ball zucchini. Hollow the zucchinis out with a teaspoon. Add them to the oven tray after 5 minutes. 
Prepare the couscous as stated on the package. Cut the zucchini pulp in small strips. Warm some olive oil in a pan and shortly fry the spinach and zucchini pulp. Mix the couscous with the spinach and the courgette.  
Mix the sweet potato cubes with the couscous and fill the ball zucchinis with the mixture.
Optionally you can sprinkle them with grated cheese and bake for 5-10 more minutes.
