Recipe Stuffed Portobellos with mozzarella
1/2 package mozzarella cheese
6 cherry tomatoes
1 tbs pine nuts
1 tbs balsamic vinegar
Preheat the oven to 180C/350F. Spray the portobellos with olive oil on all sides. But them in a baking tray. Cut the mozzarella in smaller pieces and cover the inside of the portobello mushrooms with it. Cut the cherry tomatoes in quarters and divide over the mozzarella. Place the stuffed portobellos in the oven for 15 minutes.
In the meantime roast the pine nuts for a few minutes in a skillet without oil.
Serve the mozzarella stuffed portobellos with the pine nuts, basil and balsamic vinegar.
