Vegan Christmas main: wild rice with pumpkin, spinach and cranberries

Many people think that it’s difficult to create a vegetarian or vegan main dish for Christmas. But on this page I’m showing you that it’s super easy to create a festive vegan dish for the holidays. I’m sharing the recipe of my vegan Christmas main: wild rice with pumpkin, spinach and cranberries.

I think cranberries add a holiday feel to any dish. Maybe it’s because I associate the color red with Christmas. And this recipe also contains the other Christmas color: green.
Besides the green spinach and red cranberries, I also used pumpkin cubes and pecan nuts for this main dish.
Besides being vegetarian and vegan, this Christmas main is also gluten-free. So it’s a very allergy friendly recipe, that’s perfect for people with any kind of dietary wishes or restrictions.

And this recipe is super easy too! I’ve used pumpkin cubes so I didn’t have to do the cutting myself. And I used wild rice that you only needed to warm up for 90 seconds in the microwave. Check out the rice isle of your supermarket, I’m sure it has some microwave options too!

This year you can make an easy vegetarian, vegan and gluten free Christmas main.

Recipe wild rice with pumpkin, spinach and cranberries

Ingredients (serves 4):
500 grams of wild rice
400 grams pumpkin cubes
600 grams spinach
150 grams cranberries
1 tablespoon dried thyme
Handful of pecans

Prepare the pumpkin cubes as stated on the package. For mine it was to warm them up with a bit of water in the microwave for 6 minutes.
Prepare the rice as stated on the package. For mine it was to microwave it for 90 seconds.
Warm some olive oil in a skillet and shortly fry the spinach and the cranberries. Cut the pecans.
Stir the spinach, pumpkin, cranberries and dried thyme through the wild rice. Sprinkle the chopped pecans over your main dish before serving.
